Apr. 8th, 2005 10:06 amCheers muchly to those who contributed spinach recipes, I promise to try them out. But as Robyn will no doubt tell you, I can only make four dishes. Chili, spag bol, curry and stir fry. I really do need to broaded my culinary horizons.
And whilst I never really write anything personal about myself, I thought some of you lot especially the ones who work or study in the world of academia might want to know what is going on at my work place.
Fun and games at my University
Not the greatest publicity it must be said. Anyway I'm not going to comment on what is happening as 1)I really can't be bothered and 2) a lot of people seem to be getting sacked these days for writing about their workplace in their blogs and journals.
I'm enjoying the phenomenon (was there ever a more difficult word to say?) of having an iPod mini. Tis very nice, only had to reset it once so Windows could recognise it. And if I could figure out how to export my song list to my LJ I would. As no doubt many of you are desperate to know what I listen too. *Major confession* Bought Chain Reaction by Diana Ross off iTunes. Oh the shame. Still it's fun to dance to when I'm doing the washing up.

Date: 2005-04-08 04:16 pm (UTC)1. A really good salad. Maybe a Greek salad or a Nicoise. I make a great chopped salad with bits of potato in it. This way, on some nights you don't have to cook at all.
2. One simple and tasty vegetable casserole. How about green bean casserole? Broccoli/cauliflower casserole? Another simple way of preparing veggies is roasting: you can prepare any root veges this way, as well as broccoli or asparagus. After tossing in a small amount of olive oil with salt and pepper, roast on a sheet at 220C for 10 minutes, then combine them in a casserole... delish!
3. Most men that will not eat veggies in a salad will eat them on a pizza. Making your own pizzas is extremely simple. I usually buy a premade pizza crust (Boboli in the US), but you can buy any fresh bread and make the pizza on that (French bread, pita, ciabatta, even tortillas). Put some bottled pizza sauce on the bread, then add lots of different veges on the top. If cut small, zucchini, green peppers, spinach, onions and mushrooms can be added directly, while some veggies need a bit of precooking in the microwave before being added (broccoli, carrots, asparagus). Top with cheese and of your choice of herbs (I usually just add a bit of red pepper and garlic salt) and bake at 220C for 15 minutes. Both your mouth and your wallet will thank you.
